What is kombucha?

Yes, kombucha is a delicious, refreshing beverage, but what exactly is it? Kombucha is fermented tea, and like many of the best drinks, has only a few ingredients: water, tea (camellia sinensis), sugar (or honey), and SCOBY (Symbiotic Culture of Bacteria and Yeast). The bacteria in the SCOBY, like the bacteria found in yogurt, have antioxidants, probiotics, and polyphenols, and that’s why many tout kombucha as being a “health tonic” of sorts.
